For the pink skin, you have to assign poi to the texture itself. You can do this when you click on "All Material" in the project tab at the bottom left.
For the white/grey skin, in the same location, try changing the poi version to something else and then see if the texture corrects itself. For example, if you put poi 8.1 on, try switching it to poi toon 7.3.

I downloaded this model and got to work in game, but for me the model has pure white skin but my friend sees the model as only having pink skin and it looks weird for both of us. Any thoughts on what this problem might be and how to fix it?

try downgrading the SDKs in the Creator Companion and then start a new project. I had to do this for another avatar by same creator and that actually made it work
